Cucumber and Wood Ear Mushrooms Stir-Fried with Eggs

Slice the cucumber.

Soak the wood ear mushrooms and briefly blanch them in hot water.

Chop some carrots for additional vegetables.

Scramble the eggs and set them aside.

Chop the scallions, ginger, and garlic.

Heat oil in a pan, add the chopped scallions, ginger, and garlic, then add the cucumber, carrots, and wood ear mushrooms. Stir-fry evenly, add a bit of soy sauce and salt, and then mix in the scrambled eggs before serving.
